Pecan Pie

I have a couple of recipes I still need to blog, but haven't really had the time during exams. This one is from my friend Hendrik again, who has made this lovely and delicious Pecan Pie over in the States :) Hope you enjoy!


Ingredients

1 egg
100 g of cold butter
175 g of flour
50 g of sugar
a pinch of salt

For the filling:
2 cups of pecan nuts
2 eggs
1 cup of corn syrup
3/4 of brown sugar
1 teaspoon of salt
1 teaspoon of vanilla extract
3 teaspoons of melted butter


Knead together the shortcrust pastry, being careful not to over-knead the dough. Wrap it in cling film and leave in the fridge to cool for at least 30 minutes.


For the filling, roast the nuts at 180°C for 5-7 minutes. Heat up the salt, syrup, sugar and butter until everything has dissolved, then let the mixture cool. Line your baking tin with baking paper, roll out the pastry and cover the base and the edges of the tin. Place the nuts in the tin and spread around until they cover the entire base. Whisk together the eggs and the vanilla sugar, then add this to the sugary mixture and mix in well. Pour the mixture over the nuts and bake the pie in the oven for 40-45 minutes at 190°C. Enjoy :)
